South Sudan Bamia Rice Recipe
Bamia is a flavorful rice dish from South Sudan that is made with rice, beef, okra, tomato paste and a variety of fresh spices.
2 cups basmati rice
1 pound beef, cubed
1 pound fresh okra, sliced
1 large onion, chopped
3 cloves garlic, minced
2 tablespoons tomato paste
1 tablespoon ground cumin
1 tablespoon ground coriander
1 tablespoon ground turmeric
Salt and pepper, to taste
4 cups water
Vegetable oil, for cooking
Rinse the rice in cold water several times and soak it in water for 30 minutes. In a large pot or Dutch oven, heat the oil over medium-high heat. Add the beef and cook until browned on all sides, about 5-7 minutes. Add the onions and garlic to the pot and cook until the onions are translucent, about 5 minutes.
