Preparing for such emergencies is crucial, especially in hurricane-prone areas. A practical solution for ensuring food availability during power outages is a simple yet effective recipe.

In preparation for emergencies or power outages, this hearty hurricane soup is crafted entirely from non-perishable ingredients, making it a reliable meal option when access to fresh food is limited. Perfect for situations where you may be without electricity, this recipe can be easily cooked using alternative heat sources such as a camp stove, outdoor grill, or even a fireplace.

 

To ensure your soup cooks efficiently, use a pot with a tight-fitting lid. This will help conserve heat and reduce cooking time, allowing the flavors to meld beautifully. 

 

When gathering your ingredients, opt for canned beans, vegetables, and tomatoes, along with dried herbs and spices to create a robust flavor profile. Ingredients

1 can of mixed vegetables 

1 can of beans 

1 can of diced tomatoes

1 cup of small shape dried pasta 

1 tablespoon dried onions

1/2 teaspoon of black pepper

1 teaspoon of dried basil, oregano, or thyme herbs 

1 bay leaf

1 tablespoon olive oil

1 teaspoon of lemon juice or vinegar 

1 teaspoon of white granulated sugar

3 cups of water 

Pro-tip: If you have fresh vegetables such as carrots or potatoes, add them to the pot before adding the softer vegetables.

Directions

Place the large pot on a portable gas stove, camping stove, or over an open flame.

Add the oil to the pot and heat. Drain and rinse the mixed vegetables and beans to reduce the canned taste. Sauté spices, including the bay leaf, in the pot and sauté until fragrant, about 30 seconds. 

Pour in the sugar, lemon juice or vinegar, and water into the pot with the rinsed canned vegetables and add the canned diced tomatoes, including the juice. Add the dried pasta to the pot. Stir to mix the pasta into the soup.

Bring the soup to a boil. Reduce the heat to a simmer, cover the pot, and let it cook for about 20-30 minutes or until the pasta is cooked. Stir occasionally to prevent sticking. Remove the bay leaf before serving. Ladle the soup into bowls and enjoy it hot.
