Prep time: 30 min Cook time: 1-hour Total time: 1 hour 30 min. Ingredients. 4 skinless chicken thighs. 2 tablespoons chicken fat. 1 white onion, sliced thin. 1 chili pepper, finely chopped. 6 large tomatoes chopped. 2 large white potatoes diced. 1 tablespoon minced garlic. 2 tablespoons apricot jam. 1 teaspoon ground curry. ½ teaspoon nutmeg. ½ teaspoon cinnamon. 2 dried bay leaves. Salt and pepper to taste. 8 cups of water. Directions. In a large pot, lightly brown the meat in the fat, remove and set aside. Using the same pot sauté onions with the jam and garlic.
