Mauritius Sausage Rougaille Stew Recipe


Ingredients
10 ounces smoked sausage
3 large tomatoes, diced
1 large onion, chopped
1 small piece of ginger fresh, chopped
½ teaspoon salt
½ teaspoon coriander
2 tablespoons lemon juice
2 hot peppers, chopped
2 cups vegetable broth or water.


Directions
In a large frying pan over medium heat chopped sausage and fry until fat is rendered. Add onions, ginger, and sauté until onions are caramelized. Add remaining ingredients, cover and simmer 15 minutes. Serve over rice.
