- 2 1/2 cups mashed yams
- 1 cup brown sugar
- 1/4 cup white sugar
- 1/3 cup almond milk (or 1/2 cup whole milk for extra richness)
- 1/2 cup butter
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- 1 teaspoon vanilla
- 1 teaspoon orange blossom water
- 1 teaspoon baking powder
- 3 large eggs
- 1/2 cup nuts (optional)
- 1 unbaked 9-inch pie shell
Directions
- While the yams are still warm, mash and mix with sugars, butter, and almond milk. Blend until smooth.
- In a separate bowl, whisk the eggs, then add to the yam mixture and blend well.
- Stir in vanilla, orange blossom water, baking powder, spices, and nuts (if using).
- Pour the mixture into the unbaked pie shell.
- Bake at 425°F for 10 minutes, then reduce heat to 325°F and bake for another 35 minutes until set.
