In Nigeria, goat meat is more than just a dietary staple; it is integral to social and festive occasions served during important celebrations such as weddings, festivals, and religious ceremonies. Historically, goats were one of the earliest domesticated animals in Nigeria, which cemented their role in traditional culinary practices.

Goat meat has a gamey, distinctive, rich taste. To make Goat Fried Rice, start by marinating diced goat meat in a blend of garlic, ginger, and curry powder to enhance its rich, savory flavor. Sauté the marinated goat meat until perfectly browned, then set it aside.

In the same pan, stir-fry diced onions and bell peppers, and mix vegetables until tender. Add cooked rice, mixing thoroughly to ensure all the flavors meld together. Return the goat meat to the pan, stirring until everything is well combined and heated.

Enrich your Goat Fried Rice with a full-bodied pepper gravy that perfectly complements the dish. Blend fresh tomatoes, red bell peppers, Scotch bonnet peppers, and onions into a smooth paste. In a separate saucepan, heat oil and pour in the pepper mixture, allowing it to cook until the oil separates.

Season with salt, bouillon powder, and a pinch of thyme, letting it simmer until it reaches the desired consistency. Serve the goat fried rice hot, drizzling the spicy pepper gravy on top for an extra kick. This Goat Fried Rice with Pepper Gravy dish exemplifies why goat meat is celebrated as the G.O.A.T. in Nigerian cuisine.
