Mango Potato Cake is a delicious rich cake that gets its moist texture from ripe mangoes, moist potatoes, butter, and cream.

Mango Potato Cake

Ingredients

4 large russet potatoes

1 cup fresh mangoes, chopped

1 cup whole milk

1 cup mango nectar

2 tablespoons unsalted butter

3 large eggs

1 cup granulated sugar

½ teaspoon salt

1 teaspoon mango extract

4 cups plain bread crumbs  


Glaze  

1/4 cup mango nectar  

1 cup powdered sugar


Directions

Preheat oven to 350 degrees F. Peel and boil potatoes, then mash well. Add cream, milk, nectar, salt, and vanilla. Whip eggs with the sugar and blend slowly and uniformly into the potato mixture; add mangoes. Butter an 8 x 8 baking dish, add 2 cups of bread crumbs evenly, and add the potato mixture. Cover with remaining bread crumbs and bake for 20 minutes. Remove from oven and cool completely. Mix glaze ingredients well and pour over the cake. Enjoy!

In Kenya, mangoes are grown in different parts of the country, including the coastal region, Rift Valley, and Eastern Kenya. The country's tropical and subtropical climates support mango production.

Mangoes are grown over a wide area in South Africa, and the most popular mangoes to plant are Tommy Atkins, Zill, Kensington, Irwin, Neldica, Kent, Heidi, Sensation, and Keitt.
