Salata Meshwiya Recipe

Ingredients  

3 large ripe tomatoes, diced  

½ eggplant thinly sliced  

½ teaspoon salt  

1 teaspoon cumin  

2 teaspoons garlic, crushed  

2 tablespoons olive oil  


Directions  

In a large saucepan over medium heat add oil, heat then add eggplant and spices cook until eggplant is soft. Add tomatoes, garlic mix well serve warm with traditional Tunisian bread, tabouna bread.
