South African Potato Pudding Recipe
Ingredients

high-starch potatoes such as Russets peeled and diced

large eggs
¾
cup sugar

cup whole milk
½ cup butter
1
teaspoon nutmeg
½
teaspoon salt
2
teaspoons vanilla
Directions
Preheat
the oven to 350 degrees F. Grease a 1 1/2-quart baking dish.
In
a large pot boil the potatoes, then mash. Add milk, butter, sugar and spices.
In a separate bowl whisk eggs and add 1 tablespoon of potato mixture, whisk
again then add eggs to potato mixture. Transfer to the baking dish, bake until
light brown about 35 minutes.
