Pumpkin Vegetable Stew

Simple Pumpkin and Vegetable Stew in 30-minutes


Ingredients
1 cup of your favorite canned beans
1 cup mashed pumpkin
1 cup whole corn
1 large red tomato, chopped
1 large yam, diced
2 cups vegetable broth
1 diced hot pepper
White pepper to taste
Garnish with sour cream (optional)

Directions
Add all ingredients to a large bowl mix well and then add to a casserole dish, heat for 30 minutes. Serve from the casserole dish. Garnish with sour cream. Great with fish and rice.
