Ingredients

2 cups mixed vegetables from the farmers market (e.g., zucchini, bell peppers, carrots, broccoli, cauliflower, onions, etc.), washed and chopped

1 cup cherry tomatoes, halved

1 cup fresh spinach leaves

1 cup cooked brown rice

1 cup grated cheese (cheddar or mozzarella)

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

1/2 cup vegetable broth

1/4 cup breadcrumbs 

Directions

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for about a minute until fragrant. Add the mixed vegetables to the skillet and sauté for 5-7 minutes until they start to soften.

Stir in the cherry tomatoes, spinach, dried thyme, dried oregano, salt, and pepper. Cook for another 2-3 minutes until the spinach wilts slightly. Preheat your oven to 375°F or 190°C.

In a greased casserole dish, spread the cooked brown rice evenly at the bottom. Layer the sautéed vegetables over the rice layer. Pour the vegetable broth over the vegetables to keep them moist during baking.

Sprinkle the grated cheese on top to cover the vegetables. Add a layer of breadcrumbs on top for extra crunch. Cover the casserole dish with aluminum foil and bake for 20 minutes.

Remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and golden brown. Let the casserole cool for a few minutes before serving.
