Africa Tanzanian Coconut Curried Shrimp

Africa is full of seafood recipes to satisfy your shrimp cravings. A very popular African food recipe in the East African country of Tanzania is Tanzanian Coconut Curried Shrimp, the ingredients and directions are below.


Ingredients

1 pound cleaned shrimp

2 tablespoons good quality curry powder

1 tablespoon minced garlic

1 yellow onion chopped finely

2 tablespoons of salted butter

2 medium white potatoes, finely diced

1/2 teaspoon ground paprika

1/2 tablespoon ground cumin

1 hot pepper, chopped

Salt to taste

2 cups coconut milk

1 cup vegetable stock



Directions

In a large saucepan brown over medium, heat butter, curry, onions, garlic, cumin and paprika. Add remaining ingredients except shrimp, cover tightly, and simmer until potatoes are soft 15 minutes. Add shrimp, cover simmer 5 minutes.
