This easy African cassava honey bread has a light delicious flavor of honey with a hint of lemony coriander sweet spice.

African Cassava Honey Bread

Ingredients

2 cups cassava flour

2 tablespoons honey

2 large eggs

½ cup whole milk

½ cup sugar

1 teaspoon baking soda

½ teaspoon lemon juice

1 teaspoon vanilla extract

1/2 teaspoon ground coriander

Directions
In a large bowl cream eggs and sugar, add honey, spices lemon, milk and soda, mix well. Add cassava flour, mix until soft dough forms. Place dough in a greased and floured bread pan; bake 300 degrees for 30 – 40 minutes. Serve warm with butter, jam, jelly or sweet chutney. Cassava honey bread is perfect with any African soup or stew recipe.
