Vegetarian Spicy Ground Nut Stew

Spicy Vegetarian Ground Nut Stew  


Ingredients
1 cup peanut butter
2 medium onions, sliced

2 medium red pepper, chopped
2 medium green pepper, chopped
2 large tomatoes, chopped
1 cup peanut butter
3 medium carrots, peeled and cut into 1/2 inch circles
1 teaspoon salt
1 teaspoon red pepper flake
1 chopped scotch bonnet
Water to cover

Directions
Add all ingredients into a large pot with a lid. Cook on medium for 30 minutes. Add small amount of water to peanut butter to make a smooth paste. Add peanut butter to vegetable mixture and boil for 5 minutes. Serve with rice.
