Lamb bobotie
contains healthy low-fat ground lamb, apricot jam, bananas, apples, curry
powder, onions and tomatoes. Serve lamb bobotie with yellow rice and fresh
vegetables.
South African Healthy Ground Lamb Meatloaf Bobotie Recipe
Serves 8
African food
Ingredients
2 pounds ground lamb
2 medium onions finely chopped
2 large tomatoes finely chopped
2 tablespoons white vinegar
2 large eggs
1 tablespoon apricot jam
1/2 banana sliced
1 large apple finely chopped
2 tablespoons curry powder
2 tablespoons minced garlic
1 1/2 teaspoon sugar
Salt to taste
Directions
Brown lamb lightly and drain off excess fat. Remove lamb. Add onions to same pot lamb was cook in and cook onions until transparent. Add all ingredients into a large bowl, mix well, hands work best, and cook 350 degrees for 50 minutes in a bread loaf pan. Serve with yellow rice and fresh vegetables.
