The costs for groceries especially fresh fruits and vegetables have more than doubled in the last years. 

Also, the time and labor involved in preparing fresh fruits and vegetables are more troublesome than just buying ready-made fast food. 

I hope to pass on what I have learned about African cooking in preparing healthy homemade cooked meals of meats, fruits and vegetables.

Yield: 8 servings
Serving size: 8 ounces
Calories per serving: 250 cal
Fat per serving: 4 g

Ingredients
Palm oil: 2 tablespoons
Goat meat cut into small chunks: 1 pound
Vegetable stock: 5 cups
Medium onion, chopped: 1
Large bell pepper finely chopped: 1
Minced garlic: 1 teaspoon
Crushed tomatoes: 16 oz can
Red pepper flake: 1 tablespoon
Cumin: 1/4 teaspoon
Ginger: 1/4 teaspoon
Cloves: 1/8 teaspoon
Cardamom: 1/4 teaspoon
Creamy peanut butter: 1/3 cup
Uncooked white rice: 1/2 cup


Directions
Heat palm oil in a large pot over medium heat. Sauté onions, bell pepper and garlic about 3 minutes. Add goat, tomatoes, vegetable stock, peanut butter and spices. Reduce heat to low and simmer 1 hour. Add rice cover and simmer 15 minutes.
