Tomato Fig Chutney Recipe

Use Tomato Fig chutney on grilled meats, mixed in rice and couscous and as a dressing on vegetables.  Chutney is usually made rather sweetly and very hot.


4 yellow tomatoes
4 dried figs
½ cup brown sugar
½ cup white sugar
1/3 cup lemon juice
1/ teaspoon lemon rind
1 tablespoon ginger
2 chopped hot peppers
1 cup of water


In a large pot, add water, hot peppers, and tomatoes. Boil tomatoes until tender, mash well. Add sugars, juice, rind, and ginger. Then add dried figs to the tomato mixture and simmer uncovered, 15 minutes stirring occasionally until it gets sticky and thick. Spoon into clean glass jars.
