Non-Alcoholic Beverage Gooseberry fruit Cordial Recipe


Ingredients
3 cups fresh or frozen gooseberries
1/2 cups fresh or frozen strawberries
4 cups granulated sugar
2 oz citric acid
7 cups of water

Directions
Place the sugar into a large saucepan. Pour the boiling water over the sugar and stir until dissolved, leave to cool. Add the citric acid and stir, then finally add gooseberries to the water and stir again. Cover with a clean cloth and leave to steep for 48 hours. Strain through a clean fine muslin cloth into a clean bowl. Using a funnel, fill bottles and seal and store in a cool, dark place for 3 weeks. Gooseberry fruit cordial is delicious diluted with seltzer water. Once a bottle is opened, store in the refrigerator.
