Weeknight Rustic Carrot Sorrel Soup

2 handfuls fresh sorrel leaves, chopped
2 cups diced potatoes
2 cups diced sweet carrots
1 chopped medium yellow onion
1 teaspoon salt
1 teaspoon garlic powder
Hot peppers to taste
4 cups water
Directions:In a large pot with water, boil the sorrel for 3 minutes, drain water. Add water, potatoes and seasonings to pot of sorrel and simmer 10 minutes. Serve over rice or as a vegetable soup.
