Eggplant Groundnut Sauce Recipe

1 medium onion, chopped
2 medium tomatoes, diced
1 small eggplant, diced
1 handful kale, chopped
1 cup smooth peanut butter
1/2 cup low sodium vegetable broth
2 tablespoons vegetable oil
1 hot pepper, chopped (optional)
2 garlic cloves, chopped

Directions:

In a large frying pan, heat oil over medium heat for 1 minute. Add onions and sauté until transparent. Add kale, tomatoes, hot pepper and garlic, cook for 5 minutes. Add eggplant and cook for 5 minutes more. In a small bowl, combine peanut butter and broth, stir to make a paste. Add to tomato mixture and stir well. Reduce heat to medium-low and simmer, uncovered, for 10 minutes, or until eggplant is tender.
