Old fashioned gingerbread recipe gets an upgrade thanks to ripe plantains. Plantain Gingerbread is an easy loaf cake recipe made with honey, buttermilk, and five spices.

Honey Plantain Gingerbread Cake Recipe


2 1/2 cups all-purpose flour
2 large eggs
1 stick unsalted butter
1 cup honey
1 cup buttermilk
2 large very ripe plantains
1 teaspoon salt
1 1/2 teaspoons baking powder
2 teaspoons ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1 teaspoon ground allspice
1 teaspoon vanilla extract


Preheat oven to 350 degrees F. Combine all ingredients except flour in a large bowl, mix well. Add flour to wet mixture ½ cup at a time mix after each addition. Grease and flour a bread loaf pan. Pour mixture into the pan. Bake 50 minutes to an hour, or until a toothpick inserted into the center comes out clean. Optional, drizzle with warm honey before serving.
