Sweet Vanilla Navy Bean Pie African Dessert

Beans and pie do not sound like a tasty combination but reserve judgment until you taste this Sweet Vanilla Navy Bean Pie African Dessert. Bean pie is a traditional recipe emerging as a substitute for sweet potato pie for the Nation of Islam.  


Sweet Vanilla Navy Bean Pie African Dessert

Ingredients:
One 9" prepared pie crust

3 cups cooked navy beans

2 large eggs

2 tablespoons all-purpose flour

1 12 ounce can evaporated milk

2 1/2 cups white sugar

1/2 cup unsalted butter

1 teaspoon allspice

1 teaspoon ground cinnamon

1 teaspoon ground nutmeg

1 teaspoon ground ginger

2 tablespoons vanilla extract

Directions:

Preheat oven to 350 degrees F.  Place all ingredients in a large food processer and mix until smooth. Pour the filling into the prepared pie crusts. Bake for about 45 minutes or until the filling is set.
