Old Fashioned Tomato Fig Chutney

Use Tomato Fig chutney in place of relish, mustard, ketchup and salsa. Many regions in Africa are famous for their chutney. Chutney is a sort of combination pickle and preserve. Chutney is usually made rather sweetly and very hot, and eaten with curry and rice.

-In a large pot add 2 cups water and four yellow tomatoes

-Boil tomatoes until tender, mash well

-Add 1 cup white 1/2 cup of brown sugar

-Add the juice of two lemons, the rind of one lemon and 1 tablespoon ginger

- Add 4 dried figs to the tomato mixture and simmer 15 minutes

-Remove the fruit with a skimmer pack jars two-thirds full
