African Horned Cucumber Sauce

African horned cucumber also known as the African horned melon

Native to Africa, the African horned cucumber also known as the African horned melon fruit appearances when ripe with various shades of yellow and Princeton orange on the outside and electric lime green with a jelly like flesh and a bitter taste. 

The skin also sports porcupine like spikes over its surface making the fruit look like a prop on the set of a sci-fi movie. African horned melon fruit is a bit pricey in some areas of the world. The fruit's taste has been compared to a combination of cucumber and zucchini and is well worth the price.

Pulp of 1 African horned melons (substitute 1 peeled and cut cucumber and ½ mashed banana)
4 cups sugar
½ cup dried finely chopped apricots
½ cup chopped seedless raisins
½ teaspoon ground cloves
1 teaspoon ground ginger


Add all ingredients together cook slowly until thickened. Test to see if done by putting a spoonful on a plate, it should just hold its shape. Slowly pour into sterilized jars. Allow to cool on the counter. Use the sweet sauce on anything your heart desires. Excellent as a spread on toasted bread.
